We are teaming up with River Whey Creamery for a cheese pairing event on Friday, August 12th. Each of their insanely delicious artisanal cheeses will be perfectly paired with one of our craft brews. Tickets are on sale at our taproom today for $30. . We can’t wait to see y’all there!

Large Mouth Extra Pale Ale - The Welshman
The Welshman - Welsh Caerphilly, a part of the greater British isles group of cheeses. I describe it as a distant cousin of the English White cheddar, more subtle, buttery and smooth. The Welshman is aged for 6-8 months in our caves helping to develop its natural slightly bitter rind! We are the only producer of this style of cheese in the United States!
Easy Rider American blonde - Keystone
Keystone- styled after traditional Northern Italian tomme or “farm style” cheese. This cheese is natural aged in our cave for about 4-6 months, producing a salty, lemony smooth texture and flavor. The rind gives a pleasant bitterness as well.
Quartzite Belgium Blonde - Whey Blue
Whey Blue- styled after French Roquefort, but with a Texas twist of being a DOUBLE CREAM BLUE! This cheese is aged for about 3 months in a dark salty environment producing a smooth, salty and mushroom flavor! The extra fat in the making of this cheese helps to add a buttery texture, literally melting in your mouth. The aroma is of crushed buttery Ritz crackers.
Garnet Belgium Amber - Indigo Ridge
This is our Gouda/grueyere hybrid. We age it for 10-12 months encased in wax so it keeps a lot of moisture it stared with. This cheese develops a fudge-like texture to it with a flavor of cooked milk with a little splash of funk due to the age of the cheese!
Black Lab Porter - Caldera Espana
This is our Spanish inspired smoked cheese, smoked for 24 hours over Texas pecan. Inspired by manchaego's smoked cousin, this cheese is aged for about 3-4 months before we serve it. This cheese has a flavor like bacon or beef jerky, Smokey in the front, with an acidic middle, followed by a smooth creamy finish!
