“Wilkinson’s Quartet is a play on my name, Candler A. Wilkinson IV. 
Sometimes i go to work as a duo, a trio, a quartet, a quintet, a sextet, a septet, sometimes i perform by myself. The fact is that with out me, Candler IV, there is no Quartet. I write and perform a variety of musical styles, Western Swing and Swing music are the main forms of my musical output. Though any night or day, you may hear jump blues, country blues, traditional country, yodeling, cowboy songs, be bop, boogie woogie tunes, ragtime music, fiddle tunes, songs in foreign languages, etc. “

Most of the local residents around Wimberley know us for our food and beer pairing knowledge. We have a professionally trained culinary chef who graduated from the Culinary Institute of America (CIA) and 4 in-house Cicerones. We know more about pairing food and beer than anyone in Texas.

Chef John Sanderson has been part of the Middleton Brewing family for years. And as many people know, he has been working with our Cicerones for the last 2 years on special ticketed Culinary Zymurgy dinners. Culinary Zymurgy dinners are all about food and beer paring experiences. The fact is, there have been 21 themed dinners with a focus of enjoying fine food with handcrafted beer. These dinners are centered around sharing our food, beer and knowledge with our guests.

instead of having private dinners, John now has a kitchen at the brewery. That’s right, John will be preparing gourmet food every day at the pub. His new company is called “Culinary Zymurgy LLC.” This new venture is the first of it’s kind where the focus is providing our guests with not only food and perfectly paired beer but also educating our guest as to how and when to pair gourmet food with hand-crafted beer.

John’s kitchen opens on the 23rd of this month. So keep checking back for more details.

After a brilliant career in New York City performing nightly cabaret shows, Chick Morgan moved to Wimberley for a quieter life style. Chick recently teamed up with one of the best musicians in the area, Nancy Williams. Together they provide audiences with shows you will not soon forget.

Cabaret performances by Chick and Nancy are more intimate in a setting where you feel the act is a private performance for you personally. You will see and hear their personalities and instruments at close range. You won't hear rock and there are no video screens or back-up dancers. Nope, this is up-close and personal as you get to know Chick and Nancy.

Chef John Sanderson (Magic John) will be providing hors d'oeuvres fresh from his kitchen. After graduating from the Culinary Institute of America and traveling the world as a culinary chef, Magic John also settled in Wimberley. Without exaggeration, we can say that Magic John is the best Culinary Chef within 100 miles.

Middleton Brewing will be providing the location and freshly brewed beer and a great selection of wines for the event. In addition, the pub will be transformed into a cabaret setting where alcoholic drinks will be served throughout the performance.

Working with John Sandersen, MBTX coined the term Culinary Zymurgy. We feel it is the perfect term for pairing food with beer. The actual definition of each word is:

Culinary - having to do with cooking or the kitchen.

Zymurgy - the study or practice of fermentation.

Each of the 5 plated courses are paired with a Hand-Crafted Beer selected to enhance the flavors of the meal. All drinks are included in the cost of the meal.

Raised in New Braunfels, the mecca for Texas songwriters, musicians, and music enthusiasts, Dallas was surrounded by the music industry early on. As a teenager, he opted to focus his studies on music, more specifically classical guitar. After graduation – with guitar in tow, he wandered, traveled, toured, and hasn’t looked back since. Over the past 5 years, Dallas has performed in clubs, coffee shops, piazzas throughout Europe, and on street corners and radio stations from the USA to Amsterdam, to Budapest and beyond. 

He’s crossed paths and jammed with hundreds of fellow musicians, including memorable sessions with Bob Dylan and Dr. John.

Let’s welcome Dallas back to our small brewpub in the Texas hill-country.

LIVE MUSIC - come meet Braydon Zink - Sunday 6 October 2019

Based in Austin, Braydon Zink hails from the small town of Iliff, Colorado. While attending college to become a 3rd generation lineman, Zink set his sights on a long brewing craft; a passion for country music. At age 10, he was introduced to the organ by his grandmother and quickly learned to play traditional gospel songs. Moving to the trumpet, he expanded his skills by learning how to read music. At age 11, with allowance money saved, Zink bought his first guitar. With a good ear and some Elvis Presley and Johnny Cash records from his grandparent's house, Zink taught himself how to play.

Sports took the driver's seat during Zink's high school years but he continued to play the guitar during his free time. Zink suffered from severe concussions that kept him from pursuing collegiate sports. But thanks to fate, Zink turned to his guitar; and started singing and writing his own songs. Things took off from there and soon after Zink started performing all over northeastern Colorado.

With a solid loyal following in CO, Zink set his sights on Austin, the "Live Music Capital of the World". For the past 3 years, Zink has now called Texas "home". He has played across the entire state as well as the SW portions of the US, as the opening act for artists like the Jack Ingram, Turnpike Troubadours, Johnny Rodriguez and Hal Ketchum, just to name a few. Zink's music is what Texans would consider down home "real country", combining red dirt, outlaw and a touch of southern rock influences. Zink's music makes you want to two-step across a saw dust dance floor and his authentic lyrics tug at your heart and touch your soul.
